I am a visually impaired guide dog user who just loves to bake , and I created this blog as a way to share my recipes and hopefully inspire people with sight loss to bake .
Today I’ve made a batch of Chocolate Chip Cookies

Chocolate Chip Cookies
makes 18 cookies
125 g soft butter or baking margarine
100g soft brown sugar
75g granulated sugar
1 tsp vanilla essence
1 medium egg
300g plain flour
1+1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp sea salt
100g milk chocolate chips
100g white chocolate chips
1) Line 3 baking trays with baking paper and preheat oven to 160 c fan , gas mark 4 .
2) Using a stand mixer or hand held mixer cream together butter and sugars until pale and fluffy.
3) Add in vanilla and egg until combined.
4) Slowly mix in flour , baking powder, bicarbonate of soda and salt until thoroughly mixed .
5) Mix in chocolate chips.
6) Divide dough into 18 balls , weighing around 50g each .
7) Place 6 balls of dough on each tray leaving plenty room for the cookies to spread.
8) Bake in oven for 10 minutes then using the back of a fork lightly flatten each cookie .
9) Return to the oven for about 5-7 minutes .
10) The cookies will be soft and slightly turning golden around the edges . Allow to cool on trays for about 10 minutes.
, then transfer to a wire rack to cool completely .
