Buttermilk Cheese Scones

makes 5-6 scones

ingredients

300g self raising flour

80g cold butter diced

2 tsp baking powder

1 tsp mustard powder

pinch of salt

150ml buttermilk

1 egg

100g grated cheese , I use Red Leicester 

milk for glazing

 

Method 

1) Preheat oven to 180 c gas mark 6 . Place flour , baking powder , mustard powder and salt into a large bowl . Add butter and rub together with fingertips until mixture resembles breadcrumbs.

2) Stir in most of the cheese keeping a little back for the tops of the scones.

3)  Mix together buttermilk and egg then add to mixture in bowl . Bring together to a soft but not sticky dough , if mixture is to dry add a little more buttermilk or ordinary milk until you have a soft dough.

4) Tip dough onto lightl floured work surface , knead briefly then flatten out into a disc about 1 inch thick . Using a round scone cutter cut out your scones , bringing together the dough and reshaping until you  used all the dough .

5) Place scones on a baking tray , brush with a little milk and sprinkle with remaining cheese .

6) Bake in oven for 15-20 minutes until well risen and golden 

TIP

as a visually impaired baker I quite often use a talking food thermometer to help tell when things are cooked , for cheese scones I tend to aim for an internal temperature of between 94-98 c .

 

 

 

Bacon and Egg Pie

This recipe is a family favourite and is legendary amongst my extended family as one of my mother’s great bakes !

Ingredients

2 x sheets ready rolled puff pastry

1 pack back bacon ,approximately 10 rashers

6 eggs plus 1 beaten egg for the glaze

1 8-10 inch baking fray approximately 1 inch deep 

 

method

1) line the baking tray with one of the pastry sheets

2) lay the bacon rashers across the pastry bottom , this takes about 6 rashers I then chop the remaining rashers and scatter across

3) crack the 6 eggs on top of the bacon and break the yolks with a fork

4) brush the edges of the pastry with the beaten egg and lay 2nd sheet of pastry on top sealing the edges together, trim the edges if necessary and make some slashes with a knife across the top 

5) brush with beaten egg and bake in oven , 180 c gas mark 5 for about 20 minutes or until pastry is golden brown .
